We currently sell print and download versions of our books on eJunkie, all as separate items. I'm investigating the Product Variations options and wondered if it's possible to combine a print and download version of a book into one product with two variations? I did a test but can't see a way of specifying which item should generate a download link.

A product using Variants/Variations will always issue the same download link for all orders, regardless of what option(s) the buyer selects for that item. You could use Variants to offer a selection of download-only vs. physical+download versions (e.g., "Order the print edition and get an instant download to peruse while waiting for your book to arrive!"), but the only way to offer a choice of download-only vs. physical-only versions would be to make them separate products. You could at least do some manual HTML tinkering to display a single Add to Cart button with a menu to select which product version they want to order:
