I notice some of the stores that use e-junkie are just beautiful. I'm wondering if there are any recommended template stores or designers.

You might want to investigate using the WordPress.org software to manage your site. Hundreds of very attractive, professionally-designed themes are available for WordPress, many hosting companies offer built-in WP capability pre-installed which you could simply activate in your hosting control panel, and the WP E-junkie plugin makes it easier than ever to add E-junkie buttons to a WordPress site:

We can also recommend any of the competent, E-junkie-experienced developers listed at the Developer Directory link at the top of our site.
We're not familiar with Expression Web in particular, but as long as the software you pick gives you the ability to paste our button codes directly into the raw HTML source code of your pages, such that any code you paste will be retained in the actual page itself exactly as-is (i.e., not auto-modified in any way, nor placed in a separate file that gets "called into" the main page), it should work fine.
