I am wanting to allow buyers to enter further information regarding customization of a purchase, in a simple message field, which would then be sent to me along with the details of their order...is this possible?? and if so how would I go about it???

You can either add a custom FORM in the thank you page (see "customization" in our help page http://www.e-junkie.com/ej/help.customization.php). Or, you can use variants <http://www.e-junkie.com/ej/help.variants.php> to include a small text entry box along with the ADD TO CART button itself.
