In my preferences I have my webhook url and common thank you email setup. So far they have worked flawlessly for me.
I'm curious to know if it is possible to override those preference settings for a few select individual products?
In the settings of each product, you can add a Product Thank-you Email and/or a product-specific Webhook call that are only sent when that product is purchased, though these would occur in addition to the Common email and Webhook call, rather than overriding them. These help pages explain more:
