If I choose to ship from UK I can't seem to be able to add a post code - it only accepts numbers. I've even tried pasting my post code but only the numbers paste and not the letters?

If you're referring to your Shipping Origin settings in Seller Admin > Cart Shipping Settings, the ZIP Code field there is only relevant to US-based sellers, so you can just enter 00000 there to satisfy the field if you're outside the US.
This has been fixed in our new Admin panel due to go live soon, which you can access via the "Preview the new Admin" link in the yellow bar at the top of our site.
