I've placed the Payment Date variable [%p_date%] on my Thank You page and a date isn't appearing. The other variables that I've placed in there are. I've also tried replacing it with Current Date and that doesn't work as well.

Can you please confirm that you are using that template variable in "common thank you page" and not the item specific thank you page?

No, this was being used on a product specific page. I now see that it's not a valid code for that. Though, being that gift coupons/certificates are product specific, it would make sense to have the purchase date on them. Can you add this as a feature request?
