Hi! I'm new! Does anyone know if I can skip the instant download for a customer and have them download my e-product exclusively from the thank you email that's sent to them?

Sure, just enter your website URL in E-junkie seller admin > Account preference in the thank-you URL field. After the sale buyers will land on your website instead of the E-junkie thank-you page.
