If you are referring to the PayPal email shown at the top of PayPal's checkout page, that is normal for payments going to a personal PayPal Standard account. If you upgrade to a PayPal Business account, then you can specify a Business Name that would appear instead of the email, and this would also lift PayPal's monthly receiving limit for personal accounts (typically $500/mo max. for tangible goods or auction items).
However, the buyer will always be able to tell, if they look for it, which PayPal Email they'd sent a payment to, because that's how PayPal's system works -- one email sends payment to another. This does not compromise your PayPal account security in any way. If you would rather show them a different email, you can change your PayPal login email at PayPal's end, and then make sure to change your E-junkie PayPal Email setting (in Seller Admin > Edit Profile) accordingly.
